Le mie zeppole:

Mezzo chilo di farina
Un cubetto di lievito di birra
Sale un pizzico
Acqua quanto basta
Acciughe salate
Olio di semi di arachidi

In una ciotola capiente, fare un impasto molle con la farina, il lievito, l'acqua tiepida, il sale. Lasciare lievitare fino al raddoppiamento del volume della pasta.
Scaldare sul fuoco una padella dai bordi alti con l'olio. Quando è ben caldo, con un cucchiaio versare piccole parti di impasto nel quale sono stati inseriti piccoli pezzi di acciuga salata. Friggere. Appena dorate, togliere le zeppole dal fuoco e metterle in una ciotola foderata di tovaglioli di carta assorbente. MANGIARLE ACCOMPAGNATE DA UN BUON BICCHIERE DI VINO ROSSO. Buon appetito!!!!!!

My "Zeppole"

Half a kilo of flour
A cube of yeast
Salt a pinch
Water as needed
Anchovies
Peanut oil

Stiamo per respirare aria di primavera. Manca ancora un po' ma già questa è la proiezione. Cominciamo allora a pensare abiti più leggeri, ai colori del sole e del mare, ai primi caldi. Oltre ai paesini del soveratese, ovviamente ne esistono tantissimi altri da visitare, ad esempio in provincia di Reggio Calabria, dove mi reco spesso perchèvi risiedono le mie origini.

Un itinerario è a Motticella, paesino minuscolo e qualsi disabitato del basso Jonio reggino. Si trova lungo le ultime propaggini dell'Aspromonte, ed è caratterizzato da un piccolo ma suggestivo grumo di case che trovano culmine sull'alto poggio da cui regna sovrano "il castello", palazzo nobiliare che svetta verso la valle. Ciò che caratterizza questo grazioso paesino è la geomorfologia del territorio in cui si trova pure Bruzzano Zeffirio; tutta la località è di origine vulcanica giacchè a ricordo di un'attività del genere sono rimaste le terme, presso la località Junchi. Qui l'atmosfera è ferma nel tempo su queste rocce dalle profonde fessure da cui sgorga in forma ormai esigua un'acqua "marcia" dalle note proprietà curative per lo stomaco e il fegato. qui curativi sono anche i fanghi che l'acqua plasma nel suo scorrere lentissimo. Nei tempi passati, le acque miracolose di Junchi furono meta di flussi numerosissimi di genti che da ogni parte della Calabria si recavano per trarre beneficio da queste fonti magiche. Il territorio è suggestivo, sempre assolato e allo stesso tempo dal fascino ascetico, non per niente i monaci basiliani vissero per lunghi anni qui e la chiesa di San Pantino ne è il ricordo più vivo. Ma tutto all'intorno è suggestivo e avvolgente: la Rocca Armenia su cui poggia Bruzzano Vecchia, un antico quanto vivace paesino che a seguito del terremoto del 1903 si trasferì nella Bruzzano Zeffirio o Donna Angela tuttora esistente e anzi ben strutturato. Sulla Rocca Armenia molte leggende si raccontano: di saraceni, di monaci siro-melchiti, di un principe così ricco da nacondere un grande tesoro nelle grotte e cunicoli che attraversano la rocca. E' certo che esso esisteva in epoca romana giacchè lo storico Pomponio Mela ne citava l'esistenza e d'altronde il suo nome Zeffirio ben ricorda quel venticello leggero che spense i coloni greci a sbarcare su quella costa così bella di Locri e vicinanze.
Per arrivare alle terme e a Bruzzano Zeffirio si percorre la SS 106 verso Reggio Calabria e all'altezza di Brancaleone Marina, lo svincolo con le indicazioni a destra. chi viene da Reggio Calabria percorrendo la SS 106 si prende lo stesso svincolo con le appropriate indicazioni.
Visitare questi luoghi è fare un viaggio originale, denso di atmosfere rarefatte e quasi irreali, in un contesto naturalistico immoto e decisamente unico. L'itinerario porta anche verso la conoscenza di una cultura molto radicata e legata alle tradizioni sia laiche che religiose e ad una gastronomia forte, saporita e particolarmente genuina. formaggi da alpeggi aspromontano in cui si assapora tutto il gusto delle erbe e dei prati selvatici, i ragù di capra che pascola libera lungo le colline, le melenzane ripiene, polpette e maccheroni conditi con il sugo di capra e di maiale, le nacatule biscotti fritti e girati nello zucchero, ricotte gustose e vini dall'umore tanninico deciso e persistente. Io per l'occasione vi presento la ricetta delle zeppole con le sarde.

INGREDIENTI1 kg di farina
2 cubetti di lievito di birra
acqua
sale
sarde salate
Versare la farina in una ciotola capiente e scavarla a fontana; diluire in acqua tiepida il lievito e versarlo nella ciotola. Aggiungere acqua tiepida, una manciata di sale e impastare fino ad ottenere un impasto molto molle. Lasciar lievitare in luogo tiepido fino a quando raddoppierà il volume. Scaldare abbondante olio di arachidi in una padella alta e quando è ben caldo cominciare a friggere le zeppole nel seguente modo: con un cucchiaio prendere una quantità di pasta badando a mettere dentro ogni pallina di pasta un pezzo sarda salata prima di buttarla nell'olio bollente. Scolare e servire le zeppole caldissime. Buon appetito da Vittoria!
